After a hard day’s work, the last thing you want to be doing is spending hours in the kitchen. With these recipes, you can whip up a delicious and nutritious meal that’s on the table in no time.
Cook pasta in boiling, salted water until al dente. Drain the pasta and place in a large bowl. Stir through 2 cans of tuna and 6 tablespoons of pesto, and salt and pepper. For variations, throw in some fresh cherry tomatoes, olives, or a handful of baby spinach.
Tuna Pesto Pasta
A simple method is to use a skillet. Brown some onions in a little oil and then add the ingredients of your choice. When cooked through, pour in 4-6 beaten eggs and let the frittata form. Since the pan won’t cook it through, place the skillet in the oven until the top is browned.
In a large pot, brown two pounds of ground beef. Add in a chopped onion and a few cloves of crushed garlic and cook for a few minutes more. Add two cans of diced tomatoes, one can of kidney beans and one can of pinto beans, and stir well. Season with a tablespoon each of chili powder, cumin, and oregano, plus salt and pepper to taste. Simmer for 20-30 minutes, then serve.
Fry eight ounces of chorizo sausage, sliced, in a large pan for 4-5 minutes. Set aside. Add to the pan a drizzle of olive oil, two cups of chopped sweet potato, and some garlic powder and cumin to taste. After five minutes, add in a diced onion and the chorizo. Cook for about 5 minutes and then serve.
Chorizo and Sweet Potato Hash
Sauté an onion and a few cloves of garlic in a dollop of oil. Add a tablespoon of ginger paste and a tin of tomato puree, and cook until the tomato starts to dry up. Add curry spices: half a teaspoon each of turmeric and chilli powder, two teaspoons each of coriander and cumin powder, and a good teaspoon of garam masala. Add in about two pounds of chicken pieces and cook until they’re golden brown. Pour in a half cup of water and stir, then simmer, covered, until the chicken is cooked through.

Brown a diced onion in a pan with some olive oil, then add a tray of minced beef and some finely chopped cloves of garlic. Season generously with cumin powder, smoked paprika, chilli powder, salt and pepper, and cook. If you want a richer sauce, add some tomato paste. Scoop the mix onto heated tortilla wraps, then layer with grated cheese, fresh diced tomato, coriander, avocado, lettuce, and tinned refried beans or red kidney beans.
In a large bowl, combine one pound of ground turkey, one cup feta cheese, half a cup chopped kalamata olives, and one teaspoon each of oregano, parsley, basil, onion powder, and garlic powder. Mix all ingredients together and then shape into patties. Grill until cooked through, then serve on buns with mayo and salad.
