One Minute Microwave Cheesecake
To make it, mix two ounces of cream cheese (softened) and two tablespoons of sour cream in a microwave-safe bowl. Add in one egg, a 1/2 teaspoon of vanilla essence, a squeeze of lemon, and 2-4 tablespoons of sugar (or sugar substitute) depending on how sweet you want to make it. Stir all the ingredients together until well combined, then microwave on high heat for 90 seconds, stopping to stir every 30 seconds or so. Put the cake in the fridge until you’re ready to eat/serve it, at which point you can embellish it with some fresh fruit, crushed biscuits, nuts, or whipped cream.
